the only reason is marketing. how many americans will say: oh! lets go for a nepali restaurant for dinner? indian food comes among the top popular food (speciality cuisine type) in USA having said that nepali restaurants can do a good business too, but will be limited business scope. i think there are few nepali restaurants too. i could be wrong.
