Well being in retail for a long time, I can share some of my understanding to you on this:
1. In marketing we call it 3p (product , price and placement) so depending upon the place where you are opening the kiosk and the state. for instance if you are going to open a kiosk in fashionable kind of place then product according to that. Next price, competitive price (in kiosk consumer thinks that product be cheaper than others but they dont know that rent is expensive in kiosk)
2. Self work vs hiring employees: so, mostly i have seen people who invests in kiosk they work on it which saves money.

So if the product is good (hot) and service is good then you can plan ahead and open a kiosk.
