I had following list when I went for stamping and I guess it is enough.
1) I-797 original. Don't forget to surrender the all I-94s, from all H1 approval notices and original I94 on arrival.Nobody will ask to give I-94 but need to leave it on airlines counter.

2) LCA,I-129 ( this you will get from your HR or your lawyer , you must take this, it might include whole H1b application packet copy)
3) W-2s
4) tax return forms EZ-1040
5) employment verification letter, offer letter ( I also had a letter from my HR to the embassy )
6) pay stub for 3-4 months
