I dont think it is too much to think about. Post-doc generally do not lose the job unless and until you yourself quit from the job. In my case, I would go for H1-B and then file dual intent for Green Card. By doing this way, you will get H1-B and then GC within 3 years. I know in fact for science major (if you also did Ph.D in science), you will be qualified as up and coming professional scientist if you have 2-3 papers in good international journals.
I would suggest you to go with H1-B, even though it is true that you dont have to pay tax while in OPT, but getting GC will be easier in the short-run.
