Even on a manual transmission, you use two because you need one of your feet to be on the clutches at all times; the other foot switches between the accelerator and the brakes. Hence, only one is required.
As far as preference goes, you could use both, but you can make do just as safely with one because you don't hit the brakes and the accelerator at the same time.
