There are various degrees of extremisim, some are radical, some are docile. You do not really need bloodshed to validate it. A little propensity towards religious fanaticism is enough to be an extremist. In our case, hindu worshippers shun beef eaters and at one point ( I am not sure it still exists since Nepal is more secular now), non-hindus were not allowed to enter inside Pashupatinath. That is a lower degree of extremisim regardless of what we say. You could argue that you not eating beef is a personal choice, I concur. But it does not hold true for most people in Nepal where they do not eat beef because of religious purposes.
