Do you have food processor? you can otherwise use it to make the small pieves of gundruk else try this:
Soak gundruk in hot water for some time. After it is soaked, squeeze water from gundruk and squuze more in your hand so that it takes a shape of your hand. now chop this gundruk into small fine pieces - like we chop onions or cilantro.
Add the chopped gundruk into a bowl.
Add finely chopped onion into the bowl
Add finely chopped tomatoes and cilantro into the bowl
Add to this red chili paste
Add chopped green chillies if you like
Add tamarind paste (because i do not think we can find lapsi here, use paste as you like sourness, can buyin indian store)
Heat oil in a pan and splatter methi until it is dark in color, add a pinch of hing and pinch of turmeric powder
Add this oil to the bowl with gundruk
Add salt as desired.
finely mix all ingredients and enjoy your achar!!!!!!
