You know san dai.
why we go to patan durbar square for peero aalu. You can get aalu better anywhere but we love those hands marinating potatoes since we where kids.
You know why we go to everest mo mo waiting in queue for bloody mo mo. It is due to that same old stools where you have to share and squeeze the space.
you know hey we go to That samosa palace in New Road. It is simple because they have been serving as it is in dirty neighborhood with same old tapari for last 9 yrs and more.
You know why we go to freak street for authentic newari food because that old fellow still wears dirty t-shirt and shorts which we have been seeing since bunking school days
You know why we go to that small gali Chamena Ghar of Kathmandu Gansesthan coz they still have same bench and low ceiling where you have to check your head all the time

In Hospitality Trade, something has to remain as it is other wise they loose charm. For example i still think best galwmari ( newari donuts) is from kasthamandap. i have been eating it since i was 4 yrs old and the guys has been using same hand for last 25 yrs. it may look  unhygienic but it is the flavor.
Something has to be same .........they have no explanations.

anyways getting hungry thinking of chatamari place next to kathmandu ganesthan..........chow chow..making my way there
