There is more to laugh for you MR. Ashis. What do you know my Food and Beverage Background? What do you know about my family background? Unless you havenot raise up from baking tandoori yet in Australia. For your kind information i have been called as food and beverage critic by Kathmandu Post. If you find any pesticide in my article then this article was one of the most appreciated and translated in Nepalese paper. Atleast even having certificate of Enologist ( wine expert), it took me long years to estabilsh myself. Perhpas why would you happy to see you fellow brother doing well in life rather than having miserable life abroad. Now have a look at the new issue review before it comes to net. Wine appraisal “People who tend to think out of the box are called Crazy”. This quote is applicable to my life at extreme. Introducing me as Enologist (wine Specialist) gives high voltage shock to most. The discrimination of own fellow citizen is vastly in Nepal. We get discriminated more in Nepal than any other nations around the globe. For instance we may hold specialized talent but compare to farer skin, we will always get underestimated. Initially gave me frustration, now it has motivated to climb up the hurdles of extreme. On my quest to bring review of wines to educate has opened my eyes of new technique to elaborate wines. Last 10 years of wine oriented service brought me very close to heart with JACOBS CREEK. My love for Jacobs’s creek took me express to Importers. Optimistically I insist on drinking myself to ensure the quality. Being a wine sommelier, biggest religion is to be honest with your palate and informing exact encounters Today, for your kind information our market is flooded with Chinese wine bottled with French exclusive logo. A part from that they contains pesticides harmful for our health affecting long term. If our government gives me full support without corruption, I can advise to stop importing it just by smelling. So please Mr. Food and Beverage Manager, don’t ever try to judge my skills asking best wine of the world. There is no such a things as best wine in world. I simply suggest you to check blind testing of last ten years from internet. If you expect me to name Chateaux Margauex, Saint Emillion and hundred of it in one breathe. I will provide you never ending least. Printing out name of wines from mouth don’t make top wine expert of the world. Otherwise, I could have been top in Asia with the names saved in head consign names from South America to other hemisphere of Australia. Characteristically toward White wine of my choice would be chardonnay. My expectation of warm weather and harsh edge stone containing sulfites is non other than Australian chardonnay. Basically the Chardonnay of Australia tends to build malolactic fermentation (secondary fermentation creating some bubbles inside bottle). It is acceptable as Citrus character convert into mellow and crisp. The Jacobs Creek Chardonnay chilled at it best temperature is essential to check before you drink. Foremost thing to check is color not to discuss as wine experts. Simply to check wine is alive or dead, oops! Sorry is it still drinkable or not. If color exceeds darker than beer and gold hint then avoid drinking it. Wine being vintage of 2005, it was high on aggressive acidity turning in heavy flavor. The only request for you trying this wine is to drink in right temperature. If the room temperature goes up then you may feel harsh and acidity but if you love beer then this is the perfect wine to drink. If it ascends in temperature simply add 2 cubes of ice to make softer and milder. Again coming from new school of wine sommelier suggesting you to put ice on it, believe me it works even though some half vessel may say I am idiot. The representative aroma of critic’s fruit featuring warm weather features arrays of fruit basket. The wine went well as elegant and civilized lady. Keeping in mind with past complaints received from readers. I have simplified wine language for viewers with attached wine dictionary. In other language Jacobs Creek Chardonnay 2005 is unbeatable value within range of 600. In more simple language, Dam it! Bloody wine is drinkable. Name: Jacobs Creek Chardonnay Vintage: 2005 Grape Variety: Chardonnay Temperature to be served: 46°F - 50°F (8°C - 10°C) Suggested in the company of • Khukhura Ko Sekwa (Lightly herbed poultry prepared in char gill) • Machha Tareko (Swallow fried Fillet of fish rubbed with Roasted Mustard, salt and coriander) • Aloo Tareko (Deep fried Potato topped with crucial spices cumin, coriander and chili) Jacobs Creek Cabernet Shiraz Please don’t get puzzle with Term “cabernet shiraz as single grape variety”. In wine language sommelier calls it meritage wine. The combination of different grapes from different heritage would be appropriate definition. Australians are among the top in trade of blending the best aroma and taste. They however have been encouraged from French Bordeaux. The Bordeaux wine makers were among the first to blend AOC wines. For Example 71 % of cabernet Sauvignon and 29 % of Merlot or Cabernet Franc makes combination of Bordeaux wines. The Merlot adds velvety feel to strong character cabernet grape. However the Australia has been commercial success in blending compared to Wine Guru France. My find was fruitiness of Shiraz blended with tannic (nature bitter chemical by product during pressing of grapes) nature of Cabernet. The first Phase of testing is always sight as usually, the superb color with purple hue indicating young and jolly nature. Immediately my nose gave me the hint of green pepper from Shiraz and toasted bread from sauvignon. The strong enough to burn my nose signifying wine is full bodied and full in alcohol. Tell you what this is the prefect wine to age at any cost. The three main essence of wine are tannin, fruit and acidity. If wine lacks all these components then wine lacks basic elements. If wine has all components in intact form then you can age it for longer period. If all the components gets balanced then Certainly, this wine has not yet attained elegant state though will be there in few years. Don’t complain tell me if this wine will cost times 5 in coming few years. This will be the Best wine to drink as we say elegant as civilized women. Perhaps now so called Director Food and Beverage Manager have understood what best wine is like?. The Taste itself is medium bodied with tannic character give slight burnt on tip. The however the finishing of wine is amazing as drinking water when you are thirsty. I have already booked 4 cases for my cellar. Certainly, Nepal doesn’t deal with wine aging market but I am dyam sure to get 5 times value even in Australia or Europe. I will only have to take 10 bottles of this wine to Australia to get my money back for tour. Still I suggest this wine to be taken with our spicy food as much as pleasant to be drunk by itself in another 3 yrs. Name: Jacobs Creek Cabernet Shiraz Vintage: 2006 Grape Variety: Cabernet Shiraz Temperature to be served: Suggested in the company of • Gravy Royal Khasi (Mutton cooked with sweated golden onion, bay leaves and rich herbs of Himalayas with tomato gravy) • Newari Wo (Pan fried Black lentil flour mixed with ginger paste and cumin) • Chatamari Mis-Mas (Crusty rice Crepes topped with minced buff, egg and home made sausage)
