For H1 Stamping:
-Pay stubs ( I hope u have saved all the stubs from your job, if not then it is a good idea to ask your account department to give you another copy of all)
-All imigration documents (H1 approval notice, Your past EADs, I-20s..)
-Also, some of my friends told me that US Embassy in Nepal asked them for their previous Transcripts from Nepal/India (SLC/Plus two...). So, take whatever you've got with you.
-Do not forget to take your Transcript from your U.S. University/college.
Also, if possible, it is better to get stamped from either Mexico or, Canada than Nepal. For Canada/Mexico you can just set up an appointment finish the whole process in 1-2 days. In Nepal, you might will have to go through lotsa hassels.
