I do agree that there are lots of opportunities in Nepal. I think you will have to ask yourself this question: What am I good at? What is my budget? Don't start too big at the biggining. Start with something small.
When you move back to Nepal, take some time off, may be couple of years to adjust yoursef and understand the market. Then you can invest and slowly start learning the "Nepalis Way" of doing things.
Some ideas include: Agribusiness, Retail Shop, Bakery Shop, Chiya Pasal with free Wifi, Pharmacy, Momo & Chowmein Pasal, Small Scale Achar Manufacturing, Sweets, Samosa, and Pani puri pasal, and the list goes on.
