We don't really give an exact measurement of certain ingredients because different viewers have different preferences on taste. Thus we always say "per taste". as for the spices, we did list it in the video because of the exact same reason you informed us. non-nepali viewers will not know some of the ingredients.
and lasty, for the type of chicken we use. we prefer using a black hen for our chicken curry (and other chicken recipes). Thank you for this question, we will post this in the website for our future viewership!
