First of all, here's some basic info about cows:

1.       Cows maintain a spiritual environment in a family; it means less stress, prevalence of love, care, and understanding amongst family members. It has been proved and verified that a person who stays in the vicinity of a cow for 30 minutes everyday will effortlessly and unknowingly develop positive attitude, intellect and righteousness; in a research, results were seen clearly in a period of two to six months.
2.       Cows help maintain a healthy environment. If a person has problems of blood pressure and sugar levels, he should rub his hands on the cow’s hump for 15 minutes everyday. In six months time, the patient will be cured completely. It is not clear how many other diseases can be cured this way; more research is underway.
3.       Cow’s dung and urine have numerous medicinal values; a 90 year old man testifies the fact saying that he had never took any medicines in his entire life other than cow’s urine for all diseases. At 90, he’s as healthy as a youth.
4.       Cow dung produced by just two cows is sufficient to produce enough bio-gas for cooking, and lighting a 60 W lamp for a four-member family. The dung-slurry which is a waste from the fermentation serves as a rich natural manure for farming.
5.       A family that gets to drink enough cows’ milk will not suffer from malnutrition; cow’s milk and its products have high nutritional value. The milk can also be sold for additional income.
6.       The Vedas regard a cow’s body as the dwelling of the Gods and Goddesses in subtle form; since I cannot provide proof of this, I shall not debate on it. Based on the above facts, I will just conclude that a cow does hold positive energy in her.

I am not surprised that many of us eat beef. The reason is we were probably never taught anything about it; the school doesn't teach us the supreme knowledge of our religion, and even parents themselves, are unaware of the science behind our religious practices. Consequently, the youths of the 21st century have simply begun questioning the validity of those practices. Now, the questions arises : Do we try to dig into the truth of these practices or do we simply just ignore it based on its lack of harmony with the teachings of modern science? To choose the latter would be a big blunder. To those, who question the validity of our Vedas, let me explain that Vedas talk about Quantum Physics since time immemorial, whereas science has just begun to explore it. Now scientists are beginning to realize that matter and energy are inter-convertible, and that what is gross/physical is simply the manifestation of the subtle energy. The Vedas corroborated this truth thousands of years ago when they said that everything that we see around us is a manifestation of the subtle consciousness (energy) which pervades everywhere.

The six facts about cows that I have pointed above have been thoroughly researched to be true. For most who still doubt it, nothing more can be said. You will have to change your mental inclination; if you're waiting for a westener to research on it and support the fact, that may never happen , because they would never want to quit eating meat.

Lastly, for those who are asking for quotes from Puranas, it's not difficult to find it, if you really want to discover the truth. It will be very hard to convince those who close their eyes and say that the sun doesn't exist. Again, it is always beneficial for your spiritual progress to stop eating meat. The effects of meat on your subtle "sookshma" and "karan sharir" which includes your "man and buddhi" is  an entirely different topic. But if there's any one out there who have even a least desire and inclination towards righteousness, intellect, love, and self-upliftment, you sould not kill or eat cow's meat. Remember, human life is a segment of the entire evolutionary system whereby we have come upto this stage through gradual development from the lower levels of existence: from microbes, through plants, through animals, and finally a human body. Our next level of evolution should be Godhood or divinity. Our next level should be towards becoming Buddha, Ramakrishna Paramhamsa, Vivekananda, and so on, and not fall back into lower levels of animal consciousness; and rising higher in these levels of consciousness comes through sacrifice, selflessness, service to all, and righteousness.
