As Max said lots of people have used India before. You make sure to use citizenship in the Indian airport. Indian authorities some time like to hassle nepalese and will ask for passport but make sure not to give them.
Get seperate round trip flights. One us-ind and one ind-nep.
During POE if you don't have any nepalese stamp they can't proove you went to Nepal. Medical reason works best as a reason why you stayed in India for a month.
Try to get flight from Abudhabi so you clear POE there and enter the states as a domestic flight. Less hassle.

Tldr. Use India. No stamp at Indian Airport. Abudhabi for POE.
