I think its upto you to show the W-2 from the past two years but as far as the sponsorship is concerned, they only require the recent tax year. Hence, if your total annual income based on ur Tax Return(Tax transcript) is over the poverty guideline for that year, you should be good. Get a copy of tax transcript from IRS, it doesn't annotate on the transcript whether the income came from regular or overtime.. Use that copy when u file I-864.
Also, initially after you file the I-130 petition, you do not need to submit the financial documents as yet. Once your I-130 gets approved then they'll ask you for your sponsorship document... Possibly a year later or more(depending on your immigration status PR/Citizen). So, go ahead and put the I-130 in and by next year, your income will have gone up, as you said, and you should be all set. Best of luck!
P.S. Previous years' income has very little to do with sponsorship as long as you pass the current year Poverty guideline.
