You sound like an eye doctor complaining that treatment of eye balls is boring 'cause never have a chance or opportunity to touch other kind of balls in human body. What else an Eye doctor can touch beside eye balls in Eye Department.?
Anyway, I would suggest you to write WHAT YOU HAVE TO OFFER to a New X company but not what you can gain from them. They are paying you a salary to do their job and they want to know whats your abilities are to make job done. Tell them clearly and specifically how you'll be helpful to a new company in a cover letter.
Of course, you can say you'd like to work in a challenging enviornment to utlize your creative and critical thinking ability.. bla bla...then one can assume you're a very active and energetic person. Then one can automatically assume you were counting your grey hair at your old job.
