In Nepal cow is woshiped because it gives milk like mother. This culture is established to save COW  FOR MILK. So why not buffalo? at ancient time when so called hindu originate, cow was major source of milk not buffalo,  Culture is economic dependent phenomena, it can be changed as per necessaty. religion is constitution of society- in ancient time no mordern political boundary.

So its upto you wheather u eat beef or not,
