hi, does anybody know the sekuwa recipe i.e. ingredients.

i read it somewhere here as:
curry powder
red chilies, minced
finely minced cilantro
lemongrass or lime zest
timur (szechwan pepper)
yogart
garlic paste
ginger paste
salt as per taste

but in nepal do they really use these ingredients like curry powder, yoghart, lemongrass/zest.

i will be gratful if somebody has made sekuwa at home which tastes somehow like we have in nepal.

plz.

I am sarcastic and let me ask you what do you know about cooking and how comfortable you are in this art?
What ever you mentioned are needed for sekuwaa. As I said it is an art and how comfortable in steering the spoon makes the difference in taste as well forget about the ingredients and marinating.

Main point : Slightly difference in mixing ingredients makes difference in taste, so you have to do  it in trial basis and you will know which taste you going to like it.

I  not use garlic and ginger paste, they do not give same flavor as minced.

Walkhead; You reminded me and I did  it on foreman's indoor grill. Did not taste as good as out door grill but with all those efforts it was satisfying.

Indoor grill has different flavored fire than outdoor grill so the taste is different.

There is also a free app for Nepalirecipes called" nepalifood" on the apple app store with a good collection of recipes if you are interested.

bickyz well here is what I use....Chicken thighs w/ bone( gets very juicy) or goat meat, cumin powder, coriander powder, garlic and ginger paste, ground black powder, salt, oil, little turmeric and paprika for color and usually overnight marination. I use a  outdoor  gas grill. I serve this with cut onions, tomato and green hot chillies( hariyo khursani) mixed in a bowl I add lime juice, ground black pepper, salt, olive oil, vinegar and cilantro leaves. dont have to marinate the salad overnight.  Also on the side I have cut up lemon cubes to squeeze over the sekuwa.  enjoy......
