You don't need to include your paystubs from your former employer since it's clear that you were on OPT while working for them. But it never hurts to carry additional docs just in case. I've few friends who took just the first month (October) paystub and had visa stamped from Canada. Personally, I'm in the same boat as yours. My H1 starts from October this year and I'm planning to go Canada sometime in November. Good luck !

 What is the benefit of going to Canada in lieu of Nepal ?

Thank you datktmguy. Really appreciate for your input.

MVC: There is no benefit. The only reason I want to do stamping from Canada is I don’t want to go thro all hassle of the stamping during my 2-3 week of vacation.

Going to Canada doesn't guarantee a visa stamp. Having said that, there are few perks of going there. In case you get a 221 (g), and are asked for some additional docs/PMIS verification, the process in Canada is quick compared to that in Nepal. It also helps people who don't have much vacation time or have no plans to go to Nepal. Last year my friend drove to Canada, got his visa stamped and came back in like 3 days. (It's not that quick for everyone tho)
