I might move out in a couple of weeks and I understand that post office will not forward USCIS mails to new address. Since I-765 isn't asking for physical address, can we put PO Box address in the 'US mailing address' section ? Thank you

It should be fine. Few years ago, I gave a friend's home address and it worked OK. Just in case you need to call USCIS, make sure you tell them 'your friend's address' when they ask you to verify your address.
