If anyone of you have a kwati recipe, could you please share here? Mage sankrati ma quanti khaun bhaneko tara kasari pakaune ho thahai chaina.

Quanti


Ingredients:

3 cups mixed beans (kidney beans, black-eyed beans, chickpeas, soya beans, mung beans, green beans, black beans, white beans)
1 teaspoon jwanu (lovage seeds)
1 teaspoon fennel seeds
1 teaspoon mustard seeds
1 tablespoon cumin powder
1 tablespoon coriander powder
1 tablespoon garlic, minced
1 tablespoon ginger, minced
3 fresh red chilies, minced
½ teaspoon turmeric
1 teaspoon freshly ground pepper
1 cup chopped tomatoes
2 cups yogurt
4 cups vegetable broth
3 tablespoons mustard oil
Salt to taste
2 tablespoons green onion, finely chopped for garnish

Directions:

In a large bowl with water soak beans overnight. Drain the water, wash the beans. Cover the bowl and set it in a warm place to allow sprouting. It takes about 2-3 days depending on the desired length of sprouts. To cook, heat oil in a saucepan. Fry jwanu, fennel seeds, and mustard seeds until light brown. Add 3 cups of sprouted beans and fry for 2 min. under medium heat. Add chili, cumin, coriander, garlic, ginger, turmeric, salt, and pepper. Mix to coat the sprouted beans well, for about 2 min. Add tomatoes, broth and yogurt to the beans’ mixture. Bring to a boil and let simmer in low heat until the sprouts are tender and the desired consistency of the soup has been achieved. Garnish with chopped green onions.

Serve with rice.

Thank you so much for posting this. I remember all those years in my life when I wouldn't even eat a meal without kwati. It got to a point that if i ever cried, the neighbors would think that I hadn't got kwati that day. How life changes..I havent had kwati for so long now..err..well less the time i was in ktm.

I will experiment with the recipee u've posted :)

The genuine and traditional qua-ti (warm soup) cooked by Newars is not vegetarian.

To bring out the taste of qua-ti, bone called "Twanna" cancellous bones and some with marrow are used along with some muscles and tendons of buffalos. Bone along with fat makes qua-ti wonderful.

Also common are the usage of feet of goat containing skin. This will make the qua-ti more nutritious and GARAM thing in the winter.

The above reciepe is a deviation from the original and its better to jhannu when the beans are cooked in desired consistency for preservation of the scent and taste. Boiling something for the prolonged period will make the essence evaporated.

Sweetp, if you cook quati, PLEASE DON'T FORGET TO LET ME TASTE. hamro sherpa culture ma tyo khanu ta ke nam pani suneko chaina. I swear.

Above reciepe is not for newari traditional kwati. Here is how I cook:
1. Boil Kwati mix in a pressure cooker with salt, cumin powder, turmeric powder, ginger and garlic paste.
2.When kwati is cooked then fry ajwan seed (Jwano) and mix it with kwati.
3. Mix chicken kima with salt, chilli, oil, cumin powder, turmeric powder, ginger and garlic paste. Then fry it.
4. When it's ready mix the chicken with kwati and boil for few mins.

I will let you know when I am done making it. I like it when beans are sprouted and I think that takes few days.

Ana and chicken, I am vegetarian. I did not know that there was a meat version of it. But most likely that must be the origin of it.
