Hi I am travelling to Nepal to drop my parents off in two weeks. We just realized we will only have 3 checked in luggage. Do you have any recommendations what I should take since I have 3 more allowable luggage?

Less typical thingst to fill up additional checked baggage: Paper towels, ziplocks, splenda (if you have diabetic at home), old laptops, old LCD monitor (wrap with clothes), Walmart fabric (good quality ones, tailoring is cheap in Nepal), cordless phone with built in battery backup, bio-bidet, cheap e-bay items like bow-tie, arrow-rocket for kids, etc etc.

I took old clothes and pants and gave it homeless last time.
This time I am taking children books and toys from thrift store for local schools.

if you plan to stay longer you can take monitor, projector, Bluray player/PS4, spare clothes, water purification system (Reverse Osmosis portable system, cost's about 200 bucks), good masks, etc. etc. Things that you will use while you are here. If you don't plan on being in Nepal for more than a month, then do as others said, if you want to bring something unique - a dead hooker? ;)
