I was going through the website of Nepal immigration but it seems like they have mentioned 1000 dollar equivalent of money needs to be exchanged while going abroad. Can anyone please enlighten me about this information?

It says Sponsor Letter or (Foreign CurrencY equivalent to 1000 USD & Hotel Reservation)

Is it really required for you to have 1000 USD while visiting abroad?

logic behind that is that immigration officer ultimately has the right to let you enter. More of a US requirement than Nepali side I think.
With B2 Visa, there may be questions about affordability, its a blanket requirement, burden is on the person visiting.
Imagine a tourist visiting here for two weeks without cash or sponsorship, how would they afford meals, hotels etc. during layover issues and here in the US?

Oh, Didn't know about this and not sure about this requirement.

While my parents are here...they may be only have $200-300. I have seen in others case too, they rarely bring $1000.
No need for hotel reservation if the purpose of visit is to be with son!!
